Built by Pool Players, Food People, and Local Owners
Chris Pease and Joe Burdette have been playing pool for most of their lives. Their love for the game, the competition, the tournaments, and the pool-room community helped shape the vision for On The Snap Billiards.
Chris and Joe were also part of Gasoline Alley, and with Trios Sports Bar & Grill, On The Snap Billiards, and Big Bro’s Pizza, this is an all-new, fully reimagined concept created to give the area something they believe has been missing.
The goal is to build an inviting pool hall for all ages and talent levels, a Chicago-style tavern atmosphere, and a food menu that brings together Chicago-style pizza, Mexican tacos, and American favorites including burgers, wraps, sandwiches, appetizers, and more.
To make sure the kitchen matched that vision, Joe and Chris contacted Honorio Diaz to help ensure the pizza, tacos, and full kitchen program would deliver top-quality, great-tasting, authentic local fare.
Trios is designed to be comfortable for families, serious pool players, beginners, league teams, sports fans, and anyone looking for a local place with real personality.

Big Bro’s Pizza started with family, hard work, and a love for making food people remember.
Long before it became part of Trios Sports Bar & Grill, the story started in Round Lake with two brothers, Jose Manuel Diaz, known to many as “Chile,” and his younger brother. They grew up learning the pizza business side by side, working hard, staying late, and discovering what it meant to take pride in every pizza they made.
A big part of that story began at Rosario’s Pizza in Round Lake, where Sergio and Denise gave them an opportunity that meant more than just a job. They taught them the business, helped them learn the craft, and treated them like family. During times when things were not always easy, Sergio and Denise were there. They fed them, guided them, and showed them what it meant to build something with heart.
That experience left a lasting mark.
Pizza became more than food. It became family, community, hard work, and pride. It became the sound of a busy kitchen, the smell of fresh dough, the laughs during long shifts, and the feeling of watching people enjoy something made with care.
Big Bro’s Pizza was created to honor that story.
It is a tribute to Chile, to family, to Sergio and Denise, to Rosario’s Pizza, and to the hometown roots that helped shape everything. Every pizza represents where we came from, the people who believed in us, and the lessons that stayed with us.
Now, Big Bro’s Pizza has a new home inside Trios Sports Bar & Grill in Fox Lake. We are proud to bring handcrafted pizza, hometown flavor, and a piece of our family’s story to the community.

I graduated from Grant Community High School in 1990 and have spent much of my life enjoying everything the Chain O’ Lakes has to offer—especially boating, being on the water, and embracing the unique lifestyle that makes this community so special.
Hospitality has been part of my life from the very beginning. Growing up in the bar and restaurant industry taught me the importance of hard work, service, and creating places where people feel welcome. Over the years, I’ve owned three bars and currently co-own 2 Brothers Bar & Grill alongside my brother. Many local residents may also remember Gasoline Alley, a business my longtime partner Joe and I built together. Located off Grass Lake Road, it became a favorite gathering place where countless friendships were formed and memories were made.
Beyond hospitality, I have dedicated more than 37 years to serving Lake County, McHenry County, and the greater Chicagoland area through my painting and construction businesses. Helping homeowners and businesses improve their properties while building lasting relationships has been a rewarding part of my life’s journey.
Community involvement has always been one of my greatest passions. For more than two decades, I coached youth baseball, football, and wrestling, mentoring hundreds of young athletes—including many of my friends’ children. Watching them grow into successful adults remains one of my proudest accomplishments.
My passion for billiards began when I was six years old and my older brother placed a pool cue in my hands for the first time. What started as a childhood hobby quickly became a lifelong love. Along the way, I was fortunate to learn from some of the area’s most respected players, including my longtime friend and business partner Joe, who helped further develop my appreciation and understanding of the game.
Today, I’m excited to bring that passion full circle by helping create a destination that Fox Lake can proudly call its own. Together with my partners, we're building more than just a sports bar and pool hall—we're creating a gathering place where friends, families, and visitors can enjoy great entertainment, competitive billiards, exceptional hospitality, and outstanding food from Big Bro’s Pizza, led by my friend and partner Honorio Diaz.
Fox Lake has given me a lifetime of memories, opportunities, and friendships. Investing back into this community is both a privilege and a responsibility that I take seriously. My goal is simple: create a place where people can come together, have fun, build relationships, and create memories that last for generations.
